Chocolate Chip Ginger Cookies!
2.5 cups all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
3/4 cup butter (room temp)
1 cup brown sugar
1/4 cup fancy molasses
1/4 cup sliced crystallized ginger
1/2 tsp lemon zest
3/4 cup fine chocolate pieces f(rom La Petite Souris)
1/3 cup granulated sugar (optional)
COMBINE: Flour, baking soda, cinnamon and salt in a medium bowl
BEAT: Butter and brown sugar in a large bowl with electric mixer until light and fluffy (2 minutes). Beat in egg, molasses, lemon zest. Mixture may appear slightly curdled, but don't worry. Gradually beat in flour mixture by hand until just combined. Stir in chocolate and sliced ginger.
Refrigerate dough for 20 minutes.
Preheat oven to 350*F and prepare baking sheets with parchment or cooking spray.
Scoop dough balls in tablespoon size balls. Coat with granulated sugar if desired. Bake 2 inches apart. Bake for 10-12 minutes for a gooey cookie, 12-15 for crispy cookie, or until cookies are slightly puffed and golden. Rotate baking trays half way through baking.
