Want to start practicing your own caramel so you can wow your guests over Thanksgiving? Here's a recipe to get you started!
290 g sugar
lemon juice
150 g whole cream
70 g butter
pinch sea salt or good quality fleur de sel, etc.
Add lemon juice to sugar. Just enough to coat the sugar. Set aside.
Heat cream to boil. Set aside.
Put lemon sugar on the heat and allow sugar to melt, and turn a golden brown. Stir frequently and don't allow to burn. When you've reached the colour you want, remove from heat.
Slowly add cream to cooked sugar. It will spray so go slow and stir in the cream. If mixture becomes too cool to incorporate, return to a low heat and keep stirring until smooth. At this time you may add sea salt, or small amount of liqueur or flavour of your choice.
Incorporate butter.
You are a caramel star.
